Lasagna - crockpot

Yes, you did read it right...you CAN make lasagna in your slow cooker! In fact, this is one of my favorite things to make in the crock pot! You'll soon see why...super duper easy and oh so gooey!!! :D

Lasagna

Ingredients:

1 lb of ground beef, browned and fat drained off
1/4 cup sliced mushrooms
1/4 cup diced onions
10 No-Cook lasagna noodles
1 small container of ricotta cheese
1/2 teaspoon each of salt and pepper
1 egg
1 large jar of your desired pasta sauce
Extra Italian Seasoning if desired (I'm all about the extra!)
2-3 cups of shredded cheese (Mozzarella and cheddar mix is my go to!)
1/4 cup of boiling water

Method:

Brown ground beef and drain off excess fat. Add in the mushrooms and onions and let cook for about 3 minutes, until the onions are starting to soften. Add in the extra Italian seasoning if you're all about the extra. Then, add the pasta sauce of your choice to this mixture and let simmer for about 5-10 minutes, to allow the flavors to blend.

Meanwhile, mix the container of ricotta cheese with the egg. Add in salt and pepper and stir.

Put half of the ground beef mixture in the bottom of your slow cooker. Add half of the no-cook lasagna noodles, breaking them to cover the area necessary. Do NOT overlap these types of noodles as they don't cook properly.

Smear half of the ricotta cheese mixture on top of the noodles, and then add half of the shredded cheese.

Repeat these steps once (double layer lasagna!). Then, add the boiling water along the sides of your slow cooker.

Plunk the lid on, and let that baby cook on low 6-8 hours, or on high for 3-5, depending on the heat of your slow cooker.

Enjoy!

  2. Thanks Elle! I adore my slow cooker! I am pretty sure we would have all starved to death the past few years without it!

Thanks for stopping by, and I hope you will again!
