Easy and Healthier Meatloaf

I love meatloaf. Soft, meaty meatloaf!!! This sits well with my kids, and goes great with a baked potato and some salad!

Even better...I sneak veggies in! WHHHhHhAt!???? Yup, this baby is packed with veggies and you won't believe the taste! Kid and mommy approved! Woot!

Healthier Meatloaf


Ingredients:


1 lb ground turkey, thawed
1/2 cup rolled oats
1/4 cup seasoned bread crumbs (if you have none, mash up some saltines!)
1 egg
1 tsp thyme
1/2 tsp red pepper flakes
2 carrots, minced
1 onion, minced
1 cup mushrooms, minced
2 stalks celery, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 cup ketchup (optional)
1 sheet of tinfoil

Method:


Mix everything into a bowl except for the ketchup and tinfoil (yikes!).

Take the tinfoil and line your slow cooker with it. (Yeppers, it works!) Spray it with a little non-stick spray or olive oil to prevent sticking.

With your amazing artistic abilities, shape the turkey meatloaf into a loaf-shaped thing in the slow cooker.

Cook on low for 6-8 hours, or on high for 3-5, depending on the heat of your slow cooker. (Mine cooks ridiculously fast).

About 1/2 hour before serving, add the ketchup on top to make a bit of a tomato sauce if you'd like. If not, this puppy is GREAT served with some mustard. YUM YUM!!!!
