Ham & Bean Soup - crockpot

Ahhhhhhhhhh ham and bean soup. The heavenly smell and cuddly feel it gives are out of this WORLD!

Making soup is much easier than people are led to believe. A lot of people think you need a recipe book for most soups. If you're making a specialized soup, then I understand. If you're making chicken soup on a cold day, I don't think you do. I cut up whatever veggies sound appealing, saute them in a tablespoon of butter, add a big tablespoon of thyme (do this before adding the broth), some salt and pepper, chicken meat, broth to cover and call it a day. This can go on the stove or the crockpot with fantastic results. You can add noodles or rice towards the end, or some potatoes if you are keen on them.

Soup is one of those rare meals that you always feel some warmth from the heart when eating. When someone makes soup for you on a cold day, you can tell how they really feel for you... whether it is love, friendship or hatred (if they make the soup and dump it on your lap). 

That being said, ham and bean soup is just fantastic. Smokey, comforting and just desperate for a slice of buttered toast to cuddle up with it. Here's my favorite rendition.

Ham & Bean Soup

 

Ingredients:

 

1 ham bone with plenty of leftover meat
2-3 cans of navy beans, drained and rinsed (OR previously dried ones that have been soaked overnight in water)
1/2 teaspoon of liquid smoke (optional)
2 teaspoons of Paprika (Smoked is best in my opinion)
1/2 teaspoon of Red Pepper flakes, or more if you want it spicy
1 teaspoon of Dry Mustard
1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
Enough chicken broth or water to cover

Method:

 

Toss it all in the slow cooker and let this baby cook on low, 6-8 hours. Take out the ham bone and blend up slightly if desired. Serve and enjoy!
